To celebrate my one year in the blogosphere I made my all time favourite treat- Skor squares with cream cheese icing. I haven't used a recipe for skor squares in years because there is only three ingredients; skor bits, ritz crackers and sweetened condensed milk. Here is how to procure this AH-MAH-ZING dish.
Firs things first- pre-heat your oven to 375 degrees and grease your pan (I use an 8x8 pan). You will need to crush your ritz crackers to the smallest size possible. I usually leave them in the bag and start smashing, but be careful not to bust your bag. If you would rather crush your crackers in a bowl then do so. Once they're crushed, pour them in a bowl, add sweetened condensed milk and almost a full bag of skor bits (You need to save some skor bits to garnish the top of your squares after you've added icing). Mix together these three ingredients then add them to your pan. Throw them in the oven for approximately 12 minutes, or until the edges appear darker than the middle.
While your squares are cooking you can prepare the icing. I haven't used a recipe for cream cheese icing in a very long time (I sense a pattern with the no recipe thing, but I swear I don't wing it .... often). Here is a great recipe for cream cheese icing from Kraft.
When your squares are done in the oven, let them cool for about an hour. Once they're cool (the bottom of the pan is NOT HOT) you can add your icing. Smooth it over the top and garnish with the remaining skor bits. Using cream cheese icing is not required but, in my opinion, it makes the squares taste like heaven!
I promise you won't regret your decision to bake these squares ... or you will but it's totally worth the splurge! Also, can we take the time to appreciate how COOL my plates are.
