Moms Chocolate Macaroons
3 cups rolled oats
1 cup coconut
5 tablespoons of cocoa (or more if you like them dark)
1/2 cup butter
2 cups white sugar
1/2 cup milk
Grease 2 cookie pans and lay them on the counter. Combine dry ingredients, rolled oats, coconut and cocoa, in a bowl and set aside. In a large saucepan combine butter, sugar and milk, and boil for 2-3 minutes. Pour dry ingredients into saucepan and stir well, then immediately remove from burner. Using a spoon and knife, scoop macaroon mixture onto the cookie pans. Move quickly so the mixture doesn't harden. Put cookie pans in the fridge for roughly 1 hour, or until macaroon is hardened. Keep refrigerated!
Grammies Shortbread Cookies
1 cup flour
1/2 cup icing sugar
1/2 cup cornstarch
3/4 cup softened butter
Mix all ingredients together until mixture can stick together like a ball. Coat the mixture in flour and roll out dough until it's at your desired thickness. Using cookie cutters, cut out cookies and place on greased cookie pan. Place in oven for 15-20 minutes on 350 degrees until edges begin to brown. BUT don't let them brown too much or they burn. Watch them carefully. I usually leave them in for 15 minutes MAX!
