I decided to create a new recipe this past Sunday, so I opened my cupboards and chose my ingredients. We had a few packages of quinoa, lots of veggies and a package of ground turkey that needed to be cooked. So I made a quinoa bowl. I threw spices, veggies and a few sauces into the mix and voila- Ground Turkey Quinoa Bowl (I wish I thought of a more clever name). The recipe is below!
1 lb Ground Turkey
2 Cups Quinoa (cooked)
Small Onion
1/2 Green Pepper
Can of Corn
1/8 cup of Soya Sauce
1 tsp of Sesame Oil
1/8 cup of Sesame Dressing (Asian Salad Dressing works well too)
1/8 cup of Honey Dijon Mustard
1 egg
2 tbsp garlic
1 tbsp ginger
Dash of salt/pepper
1 tbsp coconut oil
2 tbsp sour cream
Bring 2 cups of water to a boil then add uncooked quinoa. Turn to low heat and let your quinoa cook for approximately 15 minutes. While quinoa is cooking, add a tablespoon of coconut oil to a frying pan and cook your ground turkey. I always put my seasonings in while my meat is cooking. I find it helps the meat taste better and it still allows the flavours to come through in the final product. Then add chopped onions and green pepper into frying pan. Once they're softenerd, add your sauces (soya sauce, sesame oil, sesame dressing and honey dijon mustard). Finally add corn and quinoa to your frying pan. Combine well and scoop your quinoa mixture into a bowl. Add a dollop of sour cream on top of your quinoa and enjoy!
